Supreme Pizza Cauliflower Casserole

Before I lost 103 lbs, it bothered me to hear people that had experienced weight loss success say that its harder to keep it off than to lose it - really bothered me.  Well in October 2010, I weighed 282.5 lbs and wore a size 24 in July 2011 I weighed 179.5 lbs and wore a size 12 and some size 10s.  In 2016 - I GET IT - it is NOT easy to keep the weight off.  One of the best ways is to be creative with your healthy meals.  Jazz it up, spice it up, make it enjoyable BUT healthy. Supreme Pizza Cauliflower Casserole

INGREDIENTS

  • Large Head Cauliflower – Trimmed into 4 ½ cups Small Florets
  • ½ C plus 1 TBL Parmesan Cheese – Grated, Divided
  • 1 TBL plus 1 tsp. Italian Seasoning – Divided
  • 2 Cloves Garlic – Minced
  • 3 TBL Olive Oil
  • ½ tsp Salt
  • ½ tsp Pepper
  • 1 C part-skim Mozzarella Cheese – Shredded, Divided
  • ½ C Rao’s Pizza Sauce – Divided
  • 2 oz. Canadian Bacon – Sliced
  • 2 oz. Pepperoni – Sliced
  • 1 oz. Green Bell Pepper – Diced
  • 1 oz. Red Bell Pepper – Diced
  • 1 oz. Onion – Diced
  • 10 Black Olives – Sliced

DIRECTIONS
Preheat oven to 400°

In a large mixing bowl, combine cauliflower, ½ cup Parmesan cheese, 1 TBL Italian seasoning, garlic, olive oil, salt and pepper. Toss until ingredients are well combined and cauliflower is coated.

Line in a single layer, on a rimmed baking sheet and bake on the top rack for 30 minutes.

Transfer cauliflower back to mixing bowl. To the mixing bowl add ¼ cup pizza sauce and ¼ cup mozzarella cheese. Toss until ingredients are well combined and cauliflower is coated.

Transfer cauliflower mixture to a casserole dish. Layer on remaining pizza sauce and mozzarella cheese. Top with Canadian bacon, pepperoni, bell peppers, onion and olives. Sprinkle remaining 2 Tbs. Parmesan cheese and 1 tsp. Italian seasoning over top.

Reduce oven temperature to 350° and bake 30 minutes.
