One thing to add here is that the total daily recording and editing time can determine how much and the speed of storage you need in congruence with the resolution. While it's true that 8K resolution takes up lots of space if you only have 10 Minutes of video it isn't really a problem. On the other hand Netflix who has years of Video footage in 1080P will require Exabytes of storage to scale thos up to 8K video.

The volume of data being created is not an issue. Problems arise when multiple users want to access the same video stream. Before any of this takes place you need to assess the network bandwidth and connectivity to the users workstations.

The latest trend in storing large amounts of Video is in Object Storage. These solutions go into the petabytes on a regular basis. Though S3 was created in the cloud many customers are finding it to be used for better economics in local or co-hosted data centers.

Just put it on an All Flash Storage arrange using either SSD's or NVMe drives. You could a secondary tier of HDD that automatically migrates the data from the first tier. Once the editing is finished adding a 3rd tier that either sends it to the cloud or a lower cost storage solution using software is also a great choice.

In Object storage you don't have a traditional file system to works with so software categorized data is of paramount importance. With AI some companies are automating things like finding specific people in video and transcribing speech.

In essence you need to create a primary drive this is where all new projects are stored with labels and permissions. Create secondary drive and this could point to archived project locally or in the cloud. By implementing these simple steps all network users should be able access the footage.

An adventitious direction would be an object storage solution that contains various storage types that would include fast disk/SSD for tier 1 storage slower higher, capacity disk storage and tape and/or cloud storage and/or replication for tier 3 storage

Having a centralised domain that provides security policies to files and folders is of paramount importance when more people are involved. You should also create a list of company personnel that have extended rights to the files.

I couldn't agree more with the need for security around video. Especially with the deep fake technology around today. Someone adding to could be as bad as someone stealing your data. Key management is very important for your encryption solution as is your ability to change those keys as needed. (In case someone gets the old key)

Implement policies and documentation that stipulate that if a project is closed then it can be sent to archive. This way you keep backups to a minimum and all data on your primary storage is active.

One of the best things you can look for today is an ever expandable storage system that allows for retirement of old hardware. With ever increasing data and storage media you never want to perform forklift migrations if at all possible.
