I understand that when you are updating PHP from v7.4 to v8.1, you are getting a critical error on the site, and this is happening when WooCommerce is activated.
WooCommerce is compatible with PHP 8.1. We recommend that you first disable all plugins except WooCommerce, switch to a default theme such as Storefront, and then update PHP. The it shouldn’t be giving errors.
Once this is done, then activate the remaining plugins and the theme one by one.
You can create a duplicate/staging site to test this. Many hosting providers offer site staging facilities, but if you don’t have such a feature, you can create one with the WP Staging plugin.

Once ready, feel free to install and activate WooCommerce, and see if the error persists.
