The delete/cross appears on the cart page, never on the checkout page.
Also on the cart page, there is usually a quantity field and an update button to recalculate the cart.
It looks like you have a plugin or modification that bypasses the cart page. To get the cross and update quantity features, you will need to re-enable the cart page.
This is because that page is the Checkout page not your Cart.

And today, new problem.
We have many checkouts with paypal and they are always notified as “deleted” because of time-limit. I don’t know if what kind of message is received by the costumer.
Do you have an idea of what I can do ?

Where do you see this status “deleted”? I’m not sure I understand what the problem is.
It sounds like perhaps those PayPal transactions aren’t completed orders. If that is the case you should be able to recreate this as a customer by placing an order (with a test account on your store) proceeding to checkout and not completing the PayPal payment.
