Turn on the developer console in your browser to see where the ajax endpoint is. I can’t remember right now but I think it uses the WordPress rest API. If you disable the plugin everywhere you need to create a plugin filter to enable it where the form submits to.
No idea where to find ajax endpoint. I do notice a 404 error in panel
(there is on such path from the root)
/wp-json/contact-form-7/v1/contact-forms/25691/feedback/schema
Those don’t appear when PU is disabled.
So is there a solution to this?

Thats the ajax endpoint. Create a filter with that URL and enable contact form 7 on it.
You can also create a filter with https://pianowizardacademy.com/wp-json/contact-form-7/ and select also affect children. That will enable the plugin on all contact form 7 endpoints.
