If I understand you correctly, you switched to Storefront, but the issue persisted, is that correct?
As a next step, I suggest that you have Storefront as the active theme and then switch off all other plugins, leaving only WooCommerce as the active plugins.
You can do this from a staging site as described in this guide.
You can find further details on how to run a conflict test here.

We encountered a similar issue with one of our clients, and our development team successfully fixed it by updating the WordPress version, which automatically replaced the corrupted ‘TinyMCE’ library.
If you suspect that the TinyMCE library is corrupted, consider reinstalling it. This can be done either by reinstalling WordPress or by manually replacing the TinyMCE files within your WordPress installation.
Stef, the one you are looking at is not one of the ones with the problem. The problem still exists. It’s only in about 10% of my products. I am on a cruise so it’s difficult for me to get any Internet and do anything about it currently.

Can you please share links to some of the products with this issue so we can take a look?
Are there any similarities between the products?
For example: Are all products with this issue variable, or all virtual, etc.
Were they added via the default WooCommerce interface or do you use any plugins to add/modify them?
Also, to confirm, you tested by deactivating all plugins but Woo, correct? There was no other plugin active (this includes deactivating page builders and custom code)?
Furthermore, I’d like to understand your site properly. Please share with us the necessary information below for us to investigate the issue further:
System Status Report which you can find via WooCommerce > Status > Get system report > Copy for support.
Fatal error logs (if any) under WooCommerce > Status > Logs. Then you can use the selector to search for Fatal Errors.

I’m back from my trip and ready to tackle this. An email from Astra support plus your comments here gave me some stuff to try. Also, my cousin two days ago made a simple suggestion. Seemed too easy. But I just tried it: Go to the back end, copy and cut the text, update, then re-paste it and hit update again. Voila! It worked. The text is showing. Now I just have to do that about 40 more times. But at least it fixed it. Not sure why it happened in the first place, maybe a glitch when hitting the update? Thanks everyone!

Are you by chance copying and pasting from a Word doc? If so that adds HTML to the page. Without seeing what you did though it’s hard to assist.
Some of them are copied from my script software (final draft), or some could be from Word or from Pages.
They all add html and some even add css. So best to use the built in text editor to the description next time rather than the visual editor and definitely rather than any word program. Sublime and VSC are free and will clear any formatting before pasting. However you’re fine just pasting into the text portion of the description not the visual 😄🤙🏼
